Week 1: An introduction to running a sustainable kitchen (27th October)
Think big picture in a small space. Learn how to shop smart, store smart and plan so you can get the most out of what you buy. In the first lesson learn how to use whole seasonal ingredients for multiple meals.
Week 2: Low-waste, low-cost meals (3rd November)
Ran out of this? Don't have that? The kids don't like that; need to use up this? The art of swapping out ingredients means you don't need to run to the shops if you don't already have something. This lesson focuses on recipes that are adaptable so you can finish off those ingredients that have been hanging around in the pantry too long, or can go ahead and make a recipe even if you are missing a few things. Learn to bring the fun and flexibility into the kitchen.
Week 3: Cornersmith Salads and Sides - using it all (10th November)
Vegetables at the centre of your table is one of the simplest ways to reduce meat consumption and keep household costs low. Make vegetable forward recipes for stunning salads that nourish and satisfy the hungriest hippos and simple sides that make stars out of the odd and too often neglected parts of vegetables. So, think leek tops, cauliflower leaves, herb stems, fennel fronds and more!
Week 4: Kitchen waste hacks and simple preserving (17th November)
You don't have to fill the pantry to be a preserver. Learn the hack version of preserving to save the last few fruits and vegetables rattling around at the end of the week. And when you make your own preserves you don't need to buy them. We say - skill up and save!
BONUS Week 5: Everyday fermenting (24th November)
Fermenting is a great way to turn kitchen scraps into healthy, gut-loving condiments. Learn the basics of fermenting and how to add fermented foods to your everyday cooking and eating. Remember, healthy food doesn't have to cost the Earth.

All lessons will be run via Zoom and will be recorded, so don't stress if you can't make it to all of them!
