Chutneys, relishes and ketchups are the mainstays of a well stocked pantry as well as being fun and simple to make. This class focuses on the skills and knowledge you need to turn seasonal produce into condiments to enjoy all year round. Alex shares her interchangeable master recipes to make rich chutneys, vibrant relishes and have-it-with-everything ketchups. Learn how combining the right spices and herbs with seasonal fruits and vegetables will open up a world of flavours that will not only make your condiments more delicious, but enhance all your cooking adventures.
Learn the craft of preserving, including sterilising, heat processing, bottling and storage, and let Alex show you how this traditional skill will help to reduce your food waste at home.
WHAT DO YOU MAKE:
- A rich and flavoursome slow cooked chutney
- A tangy relish that highlights seasonal ingredients
- A homemade spiced ketchup for BBQ’s, eggs and marinades
Where are the workshops held?
Cornersmith Cooking School will be running its 2021 summer schedule (5th February – 18th April) at Carriageworks, in the corner kitchen space in the main building.
Parking and public transportation:
Limited on-site parking is available at the end of Carriageworks Way. Enter via 229 Wilson Street. We encourage taking public transport when possible. Carriageworks is easily accessible by train. Walk eight minutes from Redfern Station, ten minutes from Macdonaldtown Station or 15 minutes from Newtown Station. Bus routes 422, 423, 426, 428, 370, 352 stop on City Road at Codrington Street, a five minute walk from Carriageworks.
What to wear:
The only requirement is to wear closed toe flat shoes. We will provide aprons.
What to expect in a Cornersmith workshop:
All our workshops are relaxed with a focus on home cooking skills. The space at Carriageworks can accommodate social distancing requirements without losing any of the warmth and fun that make our workshops so special. You will leave with the knowledge and confidence to continue your cooking adventures at home.
Dietary requirements for refreshment
You will be provided with refreshments and a light snack during the workshop. Please let us know if you have any dietary requirements when making your booking, and we will do our best to accommodate (some workshops cannot be altered, please check specific workshop description). Unfortunately, we are not able to accommodate dietary requirements with less than 48 hours’ notice.
To comply with COVID-19 regulations, please inform us BEFORE coming to a class if you have any flu-like symptoms so we can arrange an alternative date for your booking. Otherwise, we have a strict 14-day cancellation/transfer policy. Workshop bookings are non-refundable, but you are welcome to send someone in your place.
