Jam, Marmalade & Canned Fruit

This is our sweetest workshop and the one to teach you how to transform seasonal fruit into perfect jams and marmalades, plus you’ll learn how simple it is to make your own version of canned fruit. We’ll share with you all of the fundamentals of sweet preserving from ‘setting point’ to storage and explain how important pectin, acidity and temperature is when preserving fruits. Traditional and modern methods will be discussed and there will lots of guidance and inspiration for interesting fruit combinations and flavours, plus plenty of tastings! After this class you can throw away your jam recipes and start preserving on your own. So, join us for some sweet talk and go home with all kinds of treats for the pantry.

- Learn Cornersmith’s signature marmalade recipe
At the end of class enjoy a sweet Cornersmith plate with plenty of jam and cheese, plus our beautiful house made garden tea.

Where are the workshops held?
Cornersmith Cooking School will be running its cooking classes from Carriageworks until 18th April. Our May and June schedule will be held at The Mint, Sydney Living Museum (10 Macquarie Street, Sydney) on the second floor of this incredible historic building.
Parking and public transportation:
The Mint is located next to Hyde Park Barracks Museum, at the southern end of Macquarie Street.
What to wear:
The only requirement is to wear closed toe flat shoes. We will provide aprons.
What to expect in a Cornersmith workshop:
All our workshops are relaxed with a focus on home cooking skills. The space at Carriageworks can accommodate social distancing requirements without losing any of the warmth and fun that make our workshops so special. You will leave with the knowledge and confidence to continue your cooking adventures at home.
Dietary requirements for refreshment
You will be provided with refreshments and a light snack during the workshop. Please let us know if you have any dietary requirements when making your booking, and we will do our best to accommodate (some workshops cannot be altered, please check specific workshop description). Unfortunately, we are not able to accommodate dietary requirements with less than 48 hours’ notice.
To comply with COVID-19 regulations, please inform us BEFORE coming to a class if you have any flu-like symptoms so we can arrange an alternative date for your booking. Otherwise, we have a strict 14-day cancellation/transfer policy. Workshop bookings are non-refundable, but you are welcome to send someone in your place.
