The Magic of Mushrooms

Hourly Schedule

10am - 1pm
1st May
9am - 12pm
2nd May

A little earthy, a little woody, with traces of nuts and cream, the rich flavours of mushrooms makes them one of the heartiest ingredients. Mushrooms are also a remarkable crop, growing in the dark with little resources to develop into food that is nutritious and nourishing to the constitution. We make a feast of their season by cooking our favourite mushroom dishes and preserving the rest to enjoy once the last mushrooms have disappeared from the market. We love mushrooms distinctive flavour and versatility. This is an all-rounder workshop where you will learn great ways to cook mushrooms, as well as the essential skills of pickling, drying and bottling to preserve.

  • Make and take home garlicky pickled mushrooms
  • Make and take home an intensely flavoured mushroom Duxelle to use as a quick stock, a pate or to enrich stews
  • Make and take home a Mushroom salt to season and add depth to anything

  • Together we will make roasted mushroom broth with mushroom dumplings to enjoy in class
  • Enjoy a classic mushroom salad

What to expect in a Cornersmith workshop
All our workshops are relaxed with a focus on home cooking skills. We keep our numbers small (12-16 people) to maximize your experience, and engagement with the topic and the teacher. You will leave with the knowledge and confidence to continue your cooking adventures at home.

In our hands-on workshops, you will make a number of recipes, with some to enjoy in class and the rest to take home, along with all of the recipes. We recommend bringing a few spare jars or containers to these workshops (in case any extra is made) and a carry bag to take your bounty home in.

In our demonstration classes, you will be shown the recipe/s step by step, with plenty of tasters along the way. There is no need for spare jars or containers in these classes. If you are unsure of what type your class is, please check the description of your workshop on our website or call 02 8964 7463
