Sour Cream Pastry
This is the simplest pastry to make, it's very forgiving and will bolster your confidence to become the baker you were always meant to be. We use this pastry for pies, galettes, and quiches.
250g plain (all purpose) flour, plus extra for dusting
1 teaspoon salt
200g cold butter, roughly chopped
120g sour cream
Combine the flour and salt in a food processor, then add butter and pulse until the mixture resembles sand.
Add the sour cream and pulse until the mixture forms a dough ball. Wrap in plastic wrap and set aside in the fridge for at least 30 mins.
From here, roll out to make galettes, pies and quiches.
